Pasta Carbonara


I first learned of pasta carbonara from my sister Maria who learned the recipe from her mother in law, Mrs. Carri.  I remember when she would bring the delicious pasta to Jones beach. Those were the days we would spend an entire day at the beach swimming, eating, and singing as dad played the guitar! We spent the morning cooking, preparing, and then packing all the goodies. Seriously, those were the days of wine and roses.


Ingredients for Two
3           slices of bacon, fried and crumbled
½      lb. spaghetti
1           egg
½      cup cheese

Directions:
Boil water and cook spaghetti according to package.  Drain but not too well (you want to keep some moisture).  Beat egg and mix into pasta; add 2-3 tbs. bacon oil, add crumbled bacon and Cheese. Cook in baking dish for 10 minutes.
