Spinach Fritelle

My mom used to make these as a snack! They are yummy, and they are a great way to introduce spinach to the little ones!!

1 large bag of fresh spinach (boiled, drained well, and chopped)
3 eggs beaten
½ cup Pecorino Romano (grated)
1 cup shredded sharp provolone or sharp cheddar
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. dried parsley
Salt and pepper to taste
1 cup olive oil for frying or you can use a deep fryer for real crunchy fritters.

Combine cooked and chopped spinach with remainder of ingredients. The consistency should be thick not runny. If the mixture is runny, then add a bit of flour or breadcrumb. Fry till golden. I bet there won’t be one left!© Natala Orobello
